I was a Maitre'D in one of the best boutique Inns in the U.S. Floors, bathrooms and eating areas were constantly being serviced ( no dirty floors from the party, bathrooms (men's) were constantly checked for cleanliness, any napkins or floatsam laying around was discarded immediately. Drinks were asked to be refilled before they were completely empty. Plates were removed as soon as they were finished.
